Ideally, no. Ideally, it would retain the texture and properties of food but with the additional medicinal benefits.
But it's a huge variable, because the chemistry can vary wildly. It's a pretty untapped realm in my world.

Absolutely. Alchemy can easily result in poisons and I've heard even explosions, though I've never encountered that personally.
